- 4 ounces of bread crumbs
- 6 Mahi Mahi fish fillets
- 4 ounces of butter
- 2 ounces of diced shallot onions

Ground together Macadamia nuts and bread crumbs; you may use a food processor or a blender. Put the mixture on a plate, and coat the Mahi Mahi fillets.
Heat the butter in a large skillet. Fry the fish fillets until you notice the nuts are starting to turn golden brown. Remove to a baking dish.
Meanwhile, add shallot onions to the skillets. Cook until they turn translucent, then stir in chicken stock. Mix in the fruits and the habanero peppers, as well as shredded coconut. Season with salt and/or sugar and/or pepper to your taste. Simmer until the sauce is thick, then strain to remove peppers, shallots, and fruits. Keep the sauce in a pan over low heat.
Proceed to have Mahi Mahi baked for 10 minutes at a temperature of 140 degrees Fahrenheit/ 60 degrees Celsius. Coat lightly with the sauce.
