Macadamia Crusted Nut Mahi Mahi Baked

You will need:

  • up to 3 ounces of Macadamia nuts
  • 4 ounces of bread crumbs
  • 6 Mahi Mahi fish fillets
  • 4 ounces of butter
  • 2 ounces of diced shallot onions
  • 3 ounces pineapple
  • 4 ounces papaya
  • 4 ounces mango (all fruits rough chopped)
  • 1 ½ tablespoon of shredded coconut
  • 2 seeded habanero peppers
  • some salt, pepper, and sugar (to your liking)

Preparation

One of the best Mahi Mahi fish recipes is to prepare Mahi Mahi baked with nuts. First, preheat your oven to 190 degrees Celsius / 375 degrees Fahrenheit. Ground together Macadamia nuts and bread crumbs; you may use a food processor or a blender. Put the mixture on a plate, and coat the Mahi Mahi fillets.

Heat the butter in a large skillet. Fry the fish fillets until you notice the nuts are starting to turn golden brown. Remove to a baking dish.

Meanwhile, add shallot onions to the skillets. Cook until they turn translucent, then stir in chicken stock. Mix in the fruits and the habanero peppers, as well as shredded coconut. Season with salt and/or sugar and/or pepper to your taste. Simmer until the sauce is thick, then strain to remove peppers, shallots, and fruits. Keep the sauce in a pan over low heat.

Proceed to have Mahi Mahi baked for 10 minutes at a temperature of 140 degrees Fahrenheit/ 60 degrees Celsius. Coat lightly with the sauce.

If you want, you can grill the fish instead of frying it – Mahi Mahi grilled with Macadamia nut crust is otherworldly!

Mahi Mahi Rockefeller

You will need:

  • 1 pound of bacon
  • 4 Mahi Mahi fillets
  • 1 pinch garlic salt
  • 1 pinch grounded black pepper
  • 1 tablespoon of butter
  • 6 chopped green onions
  • 4 chopped garlic gloves
  • 10 ounces of chopped spinach (or 1 package of frozen chopped spinach)
  • 3 dashes of hot pepper sauce
  • half a cup of evaporated milk
  • 2 cups of shredded Monterey Jack cheese
  • a cup of shredded parmesan cheese

Preparation

Cook the bacon for about 10 minutes in a deep skillet over medium heat. Stir occasionally until it turns brown. Drain the pieces of bacon, then chop them into smaller pieces and set them aside.

Season the Mahi Mahi fish with garlic salt and ground black pepper. Heat a skillet over medium heat, then cook the fish until it flakes a little, for 10 to 20 minutes. Place each fillet on a baking dish.

Preheat the oven. Set the rack about 6-7 inches from the heat source of the oven.

While cooking the fish, also melt the butter. Stir in spinach, green onions as well as garlic. Cook and stir for 2-4 minutes. Add chopped bacon, evaporated milk, and the red pepper sauce. Bring it to a low simmer, then, little by little, add a bit of Monterey Jack cheese until it melts completely. You can add some more evaporated milk if you have any extra left. Divide the sauce into fair portions over each fish fillet. Sprinkle it with parmesan cheese.

Broil in the preheated oven until the parmesan cheese melts. You can also use this particular recipe to fill in your Mahi Mahi fish tacos.
